Lyophilization and space food: commemorating Cosmonaut Day at Arcus

Cadets from Vasil Levski National University were our recent guests on this special day, at the invitation of one of our chemistry and environmental protection teachers, Veselka Nedkova-Yordanova. The students of Arcus saw up close what space food is, and even had the opportunity to taste it. They learned about the lyophilization process, thanks to which food in space shuttles can be stored for up to 6 years! Lyophilized fruit, ice cream, yogurt, boza, tarator and many other examples were on hand for sampling.  We also learned that the most beloved out-of-orbit dish by absolutely all the astronauts in the world is Bulgarian moussaka!
